Espresso Chocolate Soft Cookies

I know it's a soft-cookie, and you might not like it :P, but these are easy to make and super fragrant! Plus they're quick to bring to a bake-sale or party!

It's quite literally instant Espresso, made into a cookie, with any chocolate flavor that you like!

Ingredients


  • 2 Cups of All Purpose or Low Grain Flour

  • 0.5 Teaspoons of Baking Soda

  • 0.5 Teaspoons of Salt

  • 8 Teaspoons of Instant Espresso or Coffee Powder

  • 3 Teaspoons of Warm Water

  • 1 Cup and 2 Tablespoons of Granulated Sugar (Black Sugar also works!)

  • 10 Tablespoons of Unsalted Butter (at room temperature)

  • 2 Large Eggs

  • 1 Teaspoon of Vanilla Extract (optional)

  • 0.5 Cups of Chopped Chocolate Bits (I personally like adding orange/strawberry flavored chocolate).

 

Preparation

  1. Preheat your oven to around 180 degrees Celsius.

  2. Line a baking tray with baking sheets/baking paper.

  3. In a large bowl, sieve together the flour, baking soda, salt, and set aside.

  4. In a small bowl, stir together the instant espresso powder and warm water until the instant espresso has completely dissolved.

  5. Using a stand mixer or hand mixer on low speed, mix together the sugar, butter, egg, and vanilla extract until fully combined.

  6. Add in the coffee mixture to the flour mixture and mix to combine, but be careful not to over mix!

  7. Turn the mixture off and gently fold in the chocolate bits! :P

  8. To put the cookie dough onto the baking tray, use a spoon to create a small ball. That will equate to one cookie, as it'll spread and flatten when it bakes. Therefore, space each cookie ball around 1 inch apart.

  9. Bake the cookies in the oven for around 10-15 minutes, depending on how soft or chewy you like them to be!

  10. Take the cookies out of the oven and allow them to cool before serving. The texture differs after it's cool!
