Stuffed Roast Chicken! :)

Ingredients

  • A Chicken! (I prefer to use free-range ones, I find they taste the best). A good sized one around 1.2-1.3kg is perfect for sharing among 3-4 people.

  • Olive Oil

  • Mixed Herbs

  • Chopped Garlic

  • Bread Crumbs

  • Raisins

  • Chestnuts

  • Ham

  • Any other stuffing ingredient you like!

 

Cooking Process


  1. As many chickens are sold frozen you'll want to defrost it ahead of time! Make sure it's completely defrosted before baking, otherwise it won't cook through.

  2. After the chicken is thoroughly defrosted, give the insides a little wash so it's clean and ready to be stuffed. Any remaining organs, take them out ~

  3. Time to prepare the stuffing! All the ingredients should add up to about a bowl, which should fully stuff the inside of the chicken.

  4. You can feel free to mix and match what you like to stuff the chicken with; I traditionally make it with breadcrumbs, raisins, chestnuts and sliced ham, which I then lightly stir fry with some garlic.

  5. Stuff the chicken! Fill it to the brim! You can help close the opening with some toothpicks or skewers.

  6. Preheat your oven to 180 degrees Celsius.

  7. While waiting for the oven to come to temperature, brush some olive oil mixed with garlic and mixed herbs onto every skin surface of the chicken to help it cook, color and become delicious :)!

  8. If you want to eat the entire chicken wing, cover the tips with some aluminium foil to prevent it from burning in the oven.

  9. Place it into the oven and cook! It should be about 30 minutes per 500g of chicken, so for a 1.2-1.3kg chicken you're looking at about 1 hour and 10 minutes or so (especially because it has stuffing).

  10. Once it's done - just carve up and you're ready to eat! :)
